In addition to the yummy taste, this meal is packed with protein, iron, vitamin B12, fiber, zinc, niacin, vitamin B6, selenium, riboflavin, phosphorous, vitamin C, vitmin A, potassium and carbohydrates.
This recipe is suitable for babies 7-9 months and up, toddlers, big kids and adults. All you have to do is adjust the texture and portion size. Always make sure the consistency of your baby's food is one she can handle.
What you'll need:
1/4 cup brown rice
2 lamb rib chops
1 ripe nectarine or peach
Yields 12 ounces
*Pre heat your oven to 400 degrees and line a baking sheet with unbleached parchment paper.
*Put the rice into a standard blender and pulverize into a fine powder. It will take about 1 minute of blending.
*Bring 1 cup of purified water to a boil over high heat in a small saucepan. Add the brown rice and let boil for 1 minute, stirring constantly with a wire whisk to prevent clumping. Reduce heat to low, cover and let cook for about 15 minutes, stirring occassionally, until all the water is absorbed and the rice is cooked through.
*While the rice is cooking, place the lamb chops on baking sheet and brush lightly with extra virgin olive oil.
*Put the baking sheet in the oven on the center rack and roast for about 20 minutes. Then take the lamb out of the oven and let it stand for 5 minutes.
*Cut the meat off the bone and into small pieces.
*Wash the nectarine thoroughly under cold running water, peel and chop.
*Place the lamb and nectarine in the food processor and pulse until desired consistency is achieved.
*Combine rice, lamb and nectarine in a bowl and serve or store. This meal can be stored in Sage Spoonfuls jars for up to 3 days in the refrigerator and up to 3 months in the freezer.
