I am in love with this combo and so is the rest of my family! It is so easy, healthy, delicious and versatile. Not only is this puree great for babies, it's also a healthy snack for toddlers and is a fabulous topper for lamb chops, pork or chicken for your big kids and adults!
Peachy Parsnip Perfection offers a great source of vitamin C, vitamin K, manganese, fiber, folate, potassium and niacin. The earthiness of the parsnip mixes beautifully with the sweetness of the peach.
This recipe is suitable for babies 7-9 months and up, toddlers, big kids and adults. Always make sure the consistency of your baby's food is one he can handle and make sure he has tried each food individually first before combining.
What you'll need:
1 medium/large parsnip - washed, peeled and chopped.
1 peach - washed, peeled and chopped. Conventionaly grown peaches have some of the highest pesticide residues, buy organic whenever possible. If fresh peaches are not available or are out of season, feel free to use frozen, just steam them together with the parsnip before blending.
*Pour purified water into a pot until it is about 1 inch deep and bring to a boil over high heat.
*Place parsnip into a steamer basket then put the basket into the pot. Cover with a tight fitting lid and steam for 7-10 minutes, until parsnips are easily pierced with a fork.
*Put the peaches and parsnips into a food processor and blend until smooth. You can also blend the peaches and parsnip in a large mixing bowl using an immersion blender.
*Serve or store.
*Peachy Parsnip Perfection can be stored in an airtight container for up to 3 days in the refrigerator or up to 3 months in the freezer.
